I am from New Orleans, where what’s for dinner is as important as making a first impression. Food is almost as significant as breathing. We live to eat. Growing up here I’ve always caught special feelings watching people enjoy something that I’ve prepared. Even when I was a kid and I was first learning to prepare simple meals, I would sit back and wait to see the expressions on the faces of those partaking in my production. As a professional in upscale food service for almost 2 decades, I can remember watching the faces of people who took my recommendations. There’s just something about the look on a persons face when that flavor or aroma touches their soul. I guess I shouldn’t have been surprised when the same sort of feelings came over me when people would speak about the quality of foods that I have grown. It’s funny but I think I was enjoying watching people’s expressions. My father taught me to believe in the quality of the production of my hands. My mother taught me that if it is good people will come back for it time and time again. This is my motivation. It’s in my bones to create delicious beautiful food that is not only the way it was intended, but is much better than average. I have worked with chefs that have had anything they wanted at their fingertips. I have work with sommeliers with their own labels and their own James Beard Awards. I have served thousands of people including two Presidents of the United States. We are applying those experiences to Sheaux Fresh Sustainable Foods, striving to provide the same level of quality in our products and services by pulling from aspects of multiple disciplines and experiences. Everything that we can provide locally we will in the season in which it is available locally. We understand that there are some things that are desired even when out of season. We will bring those things in and provide you the knowledge if it’s origins.
